Chickpea, Pesto, Tomato & Mozzarella Salad




So now that the weather is getting nicer I am getting excited for some delicious cold salads for lunch. As much as I would love to eat pasta salad every day (because pasta DUH) I have looked for some healthy options outside of a boring grilled chicken salad. This one here is my favorite that is full of lots of protein!

Ingredients:
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/4 cup pesto
  • 1 cup chopped grape tomatoes
  • 1/4 cup chopped fresh mozzarella
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh basil, optional

Instructions:
  1. In a medium bowl, combine chickpeas, pesto, tomatoes, and mozzarella cheese. Gently stir. Season with salt and black pepper, to taste. Garnish with fresh basil, if desired.
  2. If using for lunches for week – divide evenly into tupperware.

  1. Oh I'm with you on the cold salad thing - I love making a ton and never having to worry about making lunch for the rest of the week. This one looks so good I'll have to try it out.
