So now that the weather is getting nicer I am getting excited for some delicious cold salads for lunch. As much as I would love to eat pasta salad every day (because pasta DUH) I have looked for some healthy options outside of a boring grilled chicken salad. This one here is my favorite that is full of lots of protein!
Ingredients:
- 1 (15 oz) can chickpeas, drained and rinsed
- 1/4 cup pesto
- 1 cup chopped grape tomatoes
- 1/4 cup chopped fresh mozzarella
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh basil, optional
Instructions:
- In a medium bowl, combine chickpeas, pesto, tomatoes, and mozzarella cheese. Gently stir. Season with salt and black pepper, to taste. Garnish with fresh basil, if desired.
- If using for lunches for week – divide evenly into tupperware.
Oh I'm with you on the cold salad thing - I love making a ton and never having to worry about making lunch for the rest of the week. This one looks so good I'll have to try it out.
